Now I know you’re thinking – What is that and why doesn’t it look so good? Well truth be told – it was the best thing I have eaten at Rockland all semester. That my friend – is a taco bar. It was delicious to say the very least. And it totally hit the spot! At my house, my Dad makes taco’s EVERY Monday night (aka, Taco Night) and it is my favorite night of the week. It was special to have them on this chilly Monday night; made me feel a little more at home.
I highly recommend the taco’s. YUM is the only word I can think of right now. Even my friend Maria, who has NEVER eaten a taco – LOVED it! Good job SU!
It was a wonderful last meal before my vegetarian experiment begins

Man I love me some ice cream
My weekend was fabulous with Tylor at his high school homecoming. I heard from several students that VillaFest was a BLAST! Next year – I’ll be there for sure. I got in earlier than expected last night and finished up some last minute homework and added pictures to my “back home” page.
This morning I went to breakfast with the ladies and tried the morning tater tots. YUM! Morgan was right, they are AMAZING! And then I went on with my normal day… when I was sitting at lunch with my friends Chelsea and O.
I love to challenge myself to new things… so I am going to turn vegetarian for a week and see how it works for me. I’ll keep ya posted I’m sure – but I’m thinking every week I should have a new challenge to see if I can actually do things outside of my box. I’m so excited. I mean – I love fruits and vegetables. So it SHOULD be a piece of cake… let’s hope!
